Green Salsa Verde Infused Spanish Rice
Ingredients :
1 green pepper, minced
1 onion, minced
1/2 bunch cilantro, chopped
1/4 cup Organic Garlic Infused Oil
1/4 cup diced onions
2 Tbsp Chipotle Infused Oil
2 envelopes (1 Tbsp) sazon seasoning
2 cups long-grain rice
3 1/2 cups chicken stock
1/2 cup Green Salsa Verde
4 Tbsp sofrito
1 cup peas
salt and pepper to taste
2 Tbsp chopped fresh cilantro leaves to garnish
Cilantro and Roasted Onion Infused Oil for garnish
In a food processor add green pepper, onion, cilantro, and organic garlic infused oil. Set aside 4 Tbsp for rice and freeze the rest for use later.

In a large saucepan on high heat, sauté onions in chipotle infused oil. Add the rice and toast lightly. Then add the sazon, green salsa verde, chicken stock and reserved sofrito. Bring to boil and cover and reduce heat to simmer for 20 minutes. Add the peas in the last 5 minutes of cooking just to heat through. Remove from heat and taste
