Blood Orange Molten Lava Cake
Ingredients :
Non-stick cooking spray
1/4 cup unsweetened cocoa powder
1/3 cup all natural sugar and stevia blend
3 Tbsp unsweetened applesauce
3 Tbsp First Taste Blood Orange Fused Olive Oil
1 egg, plus one egg white
1/2 cup white whole wheat flour
1 tsp vanilla extract

Garnish: (as needed)
Lite vanilla ice cream or frozen yogurt
First Taste Pomegranate Balsamic Vinegar
Pomegranate seeds
Dark chocolate, shaved
Preheat oven to 400 degrees F. Spray 4 oz ramekins with non-stick spray.
In medium bowl combine cocoa powder, sugar stevia blend, applesauce and blood orange fused olive oil.
In a small bowl, lightly whisk together egg, egg white, and vanilla extract, then add to cocoa mixture.
Gently whisk in flour until just combined, do NOT over mix! Divide mixture evenly into prepared ramekins and place on a baking sheet and bake for 9 minutes until edges are springy to touch.
Remove from oven and let sit for a few minutes, then invert onto plate.
Garnish with a scoppof lite vanilla ice cream or frozen yogurt, pobegranate sees, shaved dark chocolate and a drizzle of teh pomegranate balsamic vinegar.
Serve immediately.
