Smoked Duck & Oyster Gumbo
Ingredients :
1/2 lb smoked duck, cubed
1/4 cup First Taste Roasted Walnut Oil
1/4 cup flour
1 large onion, diced
2 celery ribs, diced
1 large green pepper, diced
3 cloves garlic, peeled and minced
1 quart chicken stock
1 cup okra
1/8 cup First Taste Espresso Balsamic Vinegar
1 tsp Tobasco sauce
2 bay leaves
1/2 tsp dried oregano
1/2 tsp dried thyme
Kosher salt, course ground pepper, cayenne pepper
1/2 lb Andouille sausage, diced
1 pint oysters
white rice, cooked
Directions:
Lightly brown duck in heated oil. Remove duck and set aside. Add flour to oil, stirring until brown. Stir in celery, onions, green peppers and garlic. Add chicken stock and bring to a simmer. Stir in okra, vinegar, tobasco, bay leaves, oregano and thyme. Simmer fo r30 minutes to an hour. Salt and pepper to taste. Add cayenne to taste. Add duck, sausage and oysters, cook 5 minutes and serve with white rice.
