Mussels in White Wine

Mussels in White Wine
Ingredients :
2 lbs fresh mussels
1/4 cup flour
2 Tbsp unsalted butter
2 Tbsp First Taste mild Picual EVOO
1/2 cup chopped shallots
1 Tbsp minced garlic
1/4 cup chopped flat leaf parsley
1/4 tsp saffron threads
3/4 cup white wine
1 1/2 tsp kosher salt
1/2 tsp black pepper
2 Tbsp First Taste Milanese Gremolata infused olive oil
To clean the mussels put them in a large bowl and cover with cold water and mix in teh 1/4 cup flour and soak for 20 minutes. Drain the mussels and de-beard and scrub shells if needed. Discard any mussels that aren't closed tightly!

In a large pot heat the butter and Picual EVOO over medium heat and add the shallots and cook for 4-5 minutes, then add teh garlic and cook for 2-3 minutes. Add the saffron, parsley, white wine, salt and pepper and bring to a boil.

Add the cleaned mussels, stir well and cover the pot and cook for 8-10 minutes at medium heat till all the mussels ahve opened (discard any that do not open). Pour the mussels and sauce into a large bowl and drizzle with the 2 Tbsp of Milanese Gremolata infused olive oil adn serve immediately!
