Strawberry Balsamic Pecan Encrusted Pork Tenderloin
Ingredients :
2-1 lb pork tenderloins, fat trimmed and sliced into 2" slices
1 1/2 cups pecans, finley chopped
1/2 cup brown sugar
1/2 tsp sea salt
1/2 tsp ground pepper
1 tsp dried basil
1/4 cup First Taste Manzanillo Olive Oil
1/4 cup First Taste Strawberry Balsamic Vinegar

Directions:
1) Preheat oven to 375 degrees F. Line a rinned baking sheet with heavy duty aluminum foil. Lightly spritz with olive oil.
2) In a shallow dish, combine the pecans, brown sugar, sea salt, ground pepper and basil. Stir together.
3)In a separate shallow idsh, place your olive oil and a splash of the strawberry balsamic. Whisk together. Dip the tenderloins into the mixture and coat.
4) Dredge the tenderloins into the pecan mixture, completely covering the tenderloins. Arrange them on the prepared baking sheet.
5) Bake until they reach the desired temperature of 155 degrees F. Approximately 20-30 minutes.
6) Remove the tenderloins from oven and allow them to rest for about 5 minutes.
7) Drizzle Strawberry Balsamic over top and serve.
